I took my car to the BMW dealer to have several things (service) done. One was to replace the outside rubber molding around the windshield. They told me that they would have to remove the windshield and that it would probably crack the windshield. Does this sound right to you?

This does not sound like good advice. There are very few people that can remove a windshield without any damage. You will have to take your chances with someone you don’t know or BMW.
The windshield at glass being used and it especially if removing and replacing which requires light to begin with as well as glass does break and it was not give warranty on installation because glass to moderate handling of glass to begin with as well.
